5 months ago I don’t think anyone can argue that tacos are a very sexy and exciting dish.
But when you’ve got an appetizer and a side, tacos have their own charm.
And the sauce is a thing of beauty, too.
This recipe is my absolute favorite.
If you have the opportunity, I highly recommend adding some salsa and some cilantro for an extra kick.
Ingredients: 1 large taco shell, diced 1 1/2 cups chopped onions 1 teaspoon lime juice 1/4 cup chopped garlic 1 teaspoon chili powder 1/8 teaspoon salt 1 teaspoon pepper 3/4 teaspoon cumin 1/3 teaspoon oregano 1/6 teaspoon cayenne pepper 2 teaspoons chopped green chilies (or 1 tablespoon of cayeno) 2 teaspoons cilantro, chopped Directions: In a large skillet, heat the olive oil over medium-high heat.
Add the onion and cook for a few minutes until translucent.
Add in the lime juice and garlic, cook for about 5 minutes until fragrant.
Add more lime juice if needed.
Add salt and pepper, if needed, and cook until the chili is fragrant and the onions have softened.
Add cilantro and cumin, and saute until fragranced, about 3 minutes.
Season with salt and a bit of cilantro to taste.
If the sauce seems too thick, add more salt and cilantro.
If it’s too thin, add a bit more olive oil and stir until the sauce thickens.
Add some cumin to the chili mixture, if necessary.
If there’s any remaining liquid left in the pan, add it and stir again.
Cover and cook on medium-low heat for 30 minutes, stirring occasionally.
Serve immediately with lime wedges.
If using cilantro instead of lime, add 1-2 teaspoons to the hot sauce and toss with tortillas.
Notes *Note: If you’re using canned corn, you’ll want to check with your food processor to ensure you don’t over-or under-do it.
If not, just add more or less as you like.
